|Quantity||Ingredients for Vendakkai Poriyal|
|25||Vendakkai / Okra / Lady’s finger|
|1/4 tsp||Mustard seeds|
|1 tsp||Urad Dal|
|1 spring||Curry leaves|
|10 – 12||Shallots (or 1/4 Onion)|
|1 tsp||Chili powder|
|Salt to Taste|
Step 1) Heat oil in a pan and add mustard seeds, Once the seeds pops out add urad dal and curry leaves . Then add chopped shallots and saute it for a minute. We can also use 1/4 regular onions instead of shallots.
Step 2) Next add the lady’s finger and saute it for 2 more minutes. Use tender ones to get best results. Next add turmeric and chili powder , required salt and mix well.
Step 3) Do not add any extra water, let is cook until done. I like roasted poriyal so I have cooked until it golden brown.
