This is a very simple Pudding that requires just 7 ingredients and could be done in just 10 minutes. Have it while its still warm or chill it in the fridge for later.
1 litre full cream milk
4 or 5 tablespoons condensed milk
2 tablespoons Custard Powder (Vanilla Flavour)
4 or 5 Slices of White Bread
1 teaspoon Vanilla Essence
3 teaspoons Jam of your choice (I used Blackberry Jam)
Boil the milk and condensed milk together. Mix the Custard Powder with some cold milk in a cup, then add it to the boiling milk. Add the vanilla essence. Simmer on low heat for a few minutes till the mixture starts thickening.
Remove from heat and pour over the bread. Sprinkle chopped nuts or raisins on top.
Let the Pudding rest for some time then chill in the fridge
- 200 gms paneer
- 3/4 boiled peas
- 3 tbsp oil
- 1/4 Tsp pepper powder
- 2 tbsp cream
- 1/4 cup milk
- 3 tbsp dry fenugreek leaves
- 1 cup water
- a pinch of amchur
- 1 tbsp salt
- 1/2 red chilli powder
1 large onion
Tomato Cashew (Kaju) paste
10 cashew nuts (Kaju)
2. For the tomato -kaju paste, grind together tomato, cashews and green chilli. keep aside.
3. Heat oil. Add onion paste and cook on low heat till oil separates. Do not let the onion turn brown.
4. Add tomato paste. Cook till dry and oil separate.
5. Add dry fenugreek leaves, salt, amchur and chilli powder. Add peas and stir for 2 minutes.
6. Add malai with milk, cook on low heat for 2-3 minutes till malai dries up slightly.
7. Add enough water, about one cup, to get a thick gravy. Boil for 2-3 minutes.
8. Add paneer. Bring to a boil. Add pepper powder. Remove from heat.
9. Garnish with roasted cashew-nuts.
Serve with rice…..

|Quantity||Ingredients for Ice Cream|
|1 liter||Full fat Milk (4 cups approx)|
|150 gram||Sugar (3/4 cup)|
|2 tbsp||Custard powder|
|1 tbsp||Vanilla essence|
|3 tbsp||broken Cashews|
Step 1) In a large heavy bottom pan add milk and cook it over medium heat until milk reduces to half, It takes approximately 45 minutes. Stir it in between to prevent the milk sticking to the bottom.
Step 2) Once the milk is reduced to half (approximately- don’t need to be exact), take a spoon (3 tbsp ) of hot milk and add it to custard powder, mix well and keep it aside. (do not add the custard powder directly into the pint, it doesn’t dissolve properly.
Step 3) Now add 2 tbsp of butter and mix well, Reduce the heat to low and gradually add the custard mixture and keep stirring on low heat.
Step 4) Now add sugar and mix well. Turn on the heat to medium and let it cook for sometime on medium until bubbles appear. (takes approximately 7 minutes)
Step 5) Once it become thick and bubbles apprears turn off the heat and add vanilla extract and mix well.
Step 6) Pass it through a strainer , as you can see its clear without any solid particles. Allow it to cool completely. Once cooled keep it in an air tight container and freeze it for 3 to 4 hours.
Step 7) After 3 hours transfer the mixture to a blender and grind it smooth without any solids. Again freeze it for 3 hours and repeat the same for 3 more times.
Step 8) After beating for the 4th time melt ghee in a pan and add broken cashews , once the cashews turns golden add sugar and wait until sugar melts and changes its color. Allow the cashew sugar mixture to cool down and add it to the beaten ice cream and freeze it.
